quick, easy, nutritious: spreadable cashew cheese recipe

So here I am, 3:20 in the morning, not being able to sleep. But it’s not anxiety, not sadness, not worry; it is excitement, joy, and hope. A sudden realization of something that has always been with me.

I want to share with you a simple recipe today but I also wanted to send along a knowledge that brings this excitement. This knowledge is always there, we all know this, but it is hard to realize it under our busy to-do lists. It is the knowledge that our life is just beginning. The rest of your life can be anything that you want it to be. You can change your name, stop smoking, become a vegan, apologize to your brother you might have hurt last year, or tell him that you love and miss him dearly. You can take the first step to do all the things that you have been dreaming about doing. Let us please always be aware of this knowledge, shall we? Let us please stay aware.

Two types of cream cheese: more or less nutritional yeast

I am a lover of nutritional yeast. If you are, too, feel free to increase the amount of the nutritional yeast in this recipe. You definitely can play around, taste and make changes in the amounts of other ingredients too. Depending on the amount of the nutritional yeast, or, say, the hemp seeds, not only the consistency but also the colour might change. So take this as your base and make your own experiments!

1/4 cup nutritional yeast
1/4 cup water
2 tbsp hemp seeds
2tbsp lemon juice
2 cups soaked raw cashews
1 tsp agar powder, OR 1 Tbsp. of agar-agar flakes OR 2 tbsp cornstarch

cashewsBlend all these together until smooth and creamy. I told you it was easy!
