Ginger Orange Granola with “Super-Foods”

When I first moved to the United States, I lived on Morningside Avenue, uptown Manhattan, in New York. My landlord was also one of my flatmates: a Puerto Rican chef, who was SUCH a good guy. He used to bake granola *every* Saturday, and, having never had granola before in my life, I was hooked. I love that smell of granola in the oven, and every time I make my own granola, I go back in years: I’m not a mum in my 40s anymore, I’m that young woman, in awe of everything (every new taste, experience, scent) this new world would bring. 
I hope you find that this magical granola will address all your senses!

Ingredients:

  • 2 ½ cups (200g) rolled oats
  • ⅔ cup (100g) almonds
  • ½ cup (70g) sunflower seeds
  • ⅓ cup (30g) shredded coconut
  • 3 tbsp. sesame seeds
  • 3 tbsp. hemp seeds
  • 1 tsp. ground ginger
  • 2 tsp. Your Super Magic Mushroom Mix
  • 1 tsp Your Super Golden Mellow Mix
  • pinch of salt
  • zest of 1 orange
  • ⅔ cup (160ml) maple syrup

Directions:

  1. Preheat the oven to 275°F (140°C). Line a baking sheet with baking paper.
  2. Combine all the ingredients together in a large mixing bowl, mix well to combine, and spread in a single layer on the baking sheet.
  3. Place the sheet into the hot oven and cook for 30-40 minutes, until golden brown, stirring the mixture every 10 minutes.
  4. Remove the sheet from the oven and set it aside on a wire rack to cool completely, before transferring it to an airtight container. Store at room temperature.

Welcome! My name is Ivy. I am an academic by training and a foodie at heart, in a small but mighty body. Classical with a twist, married to the love of my life, a proud mum of two little lions, and one little human. We have recently moved to the gorgeous state of Washington.
